How did you get started in this industry?

As an outdoor enthusiast and one that enjoys a good cup of coffee, I wanted to use my scientific training to redefine the instant coffee experience so that one can enjoy a flavorful cup anytime, anyplace; convenience without compromising quality.

What new and innovative techniques do you use to freeze dry the coffee and tea?

Haha, that is trade secret! I am not certain that this was innovation as much as learning about different methodologies and numerous variables that go into crafting a good cup of coffee, and then attempting to apply those techniques to meticulously creating an instant-style product.

What makes your coffee and tea taste so much better than other freeze-dried coffees?

This is a question asked frequently at markets. People are generally aware of instant coffee, so I think the real difference is my focus on the chemistry and variables involved with brewing.: water composition, grind size, water temperature and flow rate, coffee to water ratio, various brewing methods, freeze-drying parameters, and packaging techniques. Each offering has its own protocol based upon origin and roast profile. The care is placed into the many variables we often take for granted in the brewing process. The tea is a unique product; it is a product line that is not yet scaled up and currently only available at local markets.

As an industry pioneer, what advice would you give someone beginning their journey?

I am a scientist and former teacher, so I am only beginning my journey in this industry. I continuously seek advice from other well-established mentors. Therefore, I suggest finding others that are on similar and different paths and learn as much as possible from them, always following those lessons up with action. I moved to SLC in December 2024 and did not have a network when launching in August 2025, so it was essential to get out into the public. Utah’s Own has been an invaluable resource.

What is the next, new Tantalus Rapid Brew product or flavor?

There are several projects and collaborations in the works; however, the next Tantalus product is an “All-In-1 Blend” (coffee, oat milk, cane sugar). The complete product is brewed and freeze-dried into one powder. Consistent with our approach, you simply add water to enjoy it at any time, in any place.
